Ingredients:
•Morel mushrooms (gucchi): 1 cup (dried)
•Potatoes: 2 medium, diced
•Onion: 1 medium, finely chopped
•Tomato puree: 1/2 cup
•Ginger-garlic paste: 1 tsp
•Yogurt (curd): 1/4 cup, whisked
•Cumin seeds: 1/2 tsp
•Khada Masala (whole spices like bay leaf, cardamom, cloves): as preferred
•Turmeric powder: 1/4 tsp
•Red chili powder: 1/2 tsp
•Coriander powder: 1 tsp
•Garam masala: 1/2 tsp
•Red curry tikki masala: 1/2 tikki (optional, for enhanced flavor)
•Ghee or oil: 2 tbsp
•Salt: to taste
•Water: as needed
Instructions:
Step 1: Prep the Mushrooms
If you’re using dried morels, rinse them thoroughly under cold water to remove dirt and grit. Soak in warm water for 30 minutes. After soaking, gently squeeze out the excess water. Set aside.
Step 2: Sauté the Potatoes
In a pan, heat 1 tablespoon of ghee or oil. Add diced potatoes and sauté for 4-5 minutes until lightly golden. Remove and set aside.
Step 3: Prepare the Gravy
In the same pan, add remaining ghee/oil. Once hot, add cumin seeds and khada masala. Let them splutter. Add chopped onions and sauté until golden brown.Mix in ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears. Add turmeric, red chili powder, and coriander powder. Cook for another 30 seconds.
Step 4: Add Tomato and Yogurt
Add tomato puree and cook until the oil starts to separate. Lower the flame and add the whisked yogurt slowly, stirring continuously to avoid curdling. Cook for 2-3 minutes on low flame.
Step 5: Combine Everything
Add the soaked morel mushrooms and sautéed potatoes into the gravy. Add a little water for desired consistency. Simmer the sabzi for 10-12 minutes on low flame, letting the flavors infuse beautifully.
Step 6: Final Touch
Sprinkle garam masala and crumbled red curry tikki masala (optional).
Garnish with fresh coriander leaves.
